How to Buy

Harvest: Our beef is harvested when both the animals and the grass are ready: usually, June. We time it thus so that the meat is packed with all the nutrients we have told you about. The beef is processed in a USDA inspected plant. Then it is dry-aged fourteen days, cut into individual cuts, wrapped in butcher paper, or Kryo-Vac and frozen.

Your order: A "split-half" is one half of beef split into two equal portions. It is the portion that most of our customers ask for. On split-half orders, the meat is cut according to our prescribed instructions. (No exceptions, please.) A split-half weighs about 80-100 lbs. and requires approximately 4.5 cubic feet of storage. On larger orders, custom cutting instructions can be arranged. You may also order a “CSA style” spit-half, which is delivered three times per year in smaller portions. Cost: We charge between $6.00 and $6.30 per pound for a “traditional split-half. The cost for a “CSA-style” split half is $7.10. The cost includes storage, delivery. and processing costs. Extra ground beef, organ meats, bones and tongue are extra. (See order form for details.)

There is a $25 charge for delivery. (In years past, you paid the butcher upon pick-up; our new system eliminates that step. If you choose to pick up at one of our butchers, they will have already been paid by us directly. We will invoice you.)
